Vegetable Crumbles Chili Mac is a quick and healthy alternative to the traditional Chili Mac made with ground beef. By substitutinf the vegetable crumbles for the meat and the whole grain pasta for regular bleached pasta makes this meal a lot more heart healthy and quite a bit lower in calories and fat. |

Ingredients:
1/4 pound vegetable crumbles (Morningstar Brand is what I use)
1/2 cup chopped onion
2 cloves garlic, minced
1 can (about 15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) Mexican-style stewed tomatoes, undrained
1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
1 cup corn (frozen or can)
1 teaspoon Mexican seasoning
1/2 cup uncooked whole wheat elbow macaroni
1/3 cup reduced or no fat sour cream
Preparation:
1. Heat large skillet over medium heat until hot. Add onion and garlic; cook and stir 5 minutes.
2. Stir beans, tomatoes with juice, corn and Mexican seasoning into saucepan; bring to a boil over high heat. Cover; reduce heat to low. Simmer 10 minutes, stirring occasionally.
3. Meanwhile, cook pasta according to package directions, omitting salt. Rinse and drain pasta; stir into saucepan. Add vegetable crumbles then simmer, uncovered, 2 to 3 minutes or until heated through.
Note: The vegetable crumbles are pre cooked and need only to be warmed up. Cooking them too long will break them down and they no longer will have the texture of a ground meat.
4. Top each serving with dollop of sour cream. Garnish as desired. |
